Is it unhealthy to be working on more than one project at a time? I feel as though I find myself doing this because I either get bored or hit a bump.

I don't think it's *unhealthy*... I think most designers work on multiple projects. Some of the designers I know on this website have more than one game in development. Here is the link of projects underway: http://www.bgdf.com/node/7511

If it were unhealthy, we would all be long dead: if anything it's positive for your health, and the health of your designs. Cross pollination is a great way around roadblocks.
