It's time for me to look for a publisher, and I'd be grateful for your recommendations and warnings.
I'm particularly interested in finding someone that can produce attractive, quality towers--something like chess rooks with a Moroccan flavor. Who do you think would do this well?
The game is Syrtis. It's an abstract with a modular board. You can see some PNP and test versions here.

You'll probably need to find someone that specializes in abstracts. Abstracts are hard to market, because they have no story/atmosphere. Most publishers have little to no interest.

Kadon is one publisher like that. Their products seem to be of good quality, though they tend to be a bit pricey, IMO. I notice that Fox Mind has a few abstracts as well.
